Valentine Peanut Butter Cups {Gluten Free, Dairy Free & Diabetic Friendly}
Ingredients
6 ounces sweetened carob chips
2 tablespoons coconut oil
2 tablespoons peanut butter, natural, no sugar added
2 packets powdered stevia
2 tablespoons crushed chopped peanuts
Directions
In a small bowl melt carob chips and coconut oil in the microwave or in a pot on the stove. Stir until completely smooth. In another bowl mix the peanut butter and stevia together. In a silicone mini valentine shaped mold or mini cupcake liners, fill each with 1 teaspoon of chocolate. Add 1/2 teaspoon of peanut butter. Cover each with 1 more teaspoon of chocolate. Top with crushed peanuts. Refrigerate for 30 minutes to an hour.

Meringues are one of my favorite cookies so today I decided to play around with flavors! There are so many possibilities out there with extracts, spreads, jams, crushed fruit, and cocoa powder that you can truly make any meringue flavor you’d like, you can even dye them different colors (I dyed the peanut butter orange and the raspberry pink).

At less than 10 calories, fat free and only 2 carbs grab a few as a tasty guilt-free snack!

Uhhh no big deal-just pizza made from ALL VEGGIES (with two egg whites and some sprinkled feta, of course…)
Cauliflower Crust:
1C riced cauliflower (do in blender. Chop until it turns to little white rice-looking things)
2 egg whites
oregano
salt
*mix all ingredients in a mixing bowl and then pat it down onto a baking sheet and bake at 425 for 10 minutes
MY PIZZA! :D

little bit of spinach
cherry tomatos
*stick back in the oven on broil for 2 minutes and PERFECTION!

lol sure! it’s simple!

ingredients:

  • 1 can (i think 15oz) whole peeled san marzano tomatoes
  • small white onion, diced
  • a ton of garlic (i mean this depends on your preference)
  • a ton of fresh & dried basil
  • salt & pepper to taste
  • optional: red pepper flakes

in a saucepot i spray some olive oil, and put the onion in, let it start to cook down. then add the garlic. once they’re both golden i dump in the can of tomatoes & use my potato-masher to break up the tomatoes. add the basil, salt & pepper and red pepper flakes. cover and turn the flame to low & let it simmer for an hour or two.

Soy Protein Pancake Recipe! With strawberry syrup!
- 1scoop vanilla flavoured soy protein powder from trader joes - 1/4 cup egg whites - 1 tbs psyllium husk (get at trader joes) - 1 tbs ground flax seed - about 1/4 cup or a little more of unsweetened almond milk
Mix all together and grease pan lightly with coconut oil. Evoo is ok too.
Make pancakes as you would regular ones! Flip after about 30 sec on medium to low heat!!!!
For syrup I just microwaved some regular strawberry jam with a bit of water.
Super yummy!!!!
